3. Add another 3/4 cup of water to the dry residue and stir the mixer again for one minute. Extract the milk again - add to the original extract.

4. Repeat this process two to three times until basically all the 'milk' is extracted from the coconut.

5. Note: This process can be repeated once or twice, but keep in mind that the milk becomes thinner with each continuous extraction.

6. Remove the kokum from the water, add the coconut milk mixture to the kokum water, mix well to get a creamy pink solkadhi.

7. Taste it and adjust the spices as needed.

8. Set aside for an hour or more.

9. Note: It is important to rest for at least one hour before using Solkadhi.

10. Garnish with fresh coriander leaves and serve chilled.

11. Chef's advice: And remember to stir it whenever you serve it - the coconut juice rises upwards when the curry is left a little!
